Lemoncello

8 large organic lemons

1 liter ( 4 cups) 190 proof Everclear grain alcohol

( can use 100 proof vodka)

2 cups sugar

1 liter ( 4 cups water)

1. Using a peeler ( ceramic is best) , peel the lemon – remove only the zest, not the white pith.

2. Put the peel in the alcohol. Put it in a sealed bottle, in a cool, dark place. Give it a little shake daily. Leave to steep for two weeks.

3. Strain out the peel.

4. Heat the water and stir in the sugar until it’s completely incorporate. When cool, Add to the infused alcohol.

5. Let rest in cool dark place 1 week.

6. Put in freezer. Drink

The juice of the lemons can be made into lemonade, or Put in ice cube trays, frozen, bagged for cooking
