Gnocchi

10-12 small russet or Idaho baking potatoes , skin on

3-4 cups all purpose flour

2 eggs

Grated Parmesan cheese

Black pepper

1. Scrub potatoes. In pot, barely cover potatoes. Add salt. Bring to boil. Boil until barely tender. You should be able to get a fork in it with relative ease. let cool. Then peel.

2. rice potatoes on counter or a large wooden board. Add equal amount of flour (@3-4 cups). Add pepper and a little grated Parmesan cheese.

3. Beat in eggs. Using your hands, work in the eggs until a ball forms. Cut into chunks, roll in snakes. Cut roll into 1 inch pieces and roll off a fork or a gnocchi board. Repeat.

4. Boil in salted water until they begin to turn over ( a few minutes). Serve with marinara, meat sauce, butter and sage, or any sauce you choose.

Press with your thumb, then flick your thumb downward to roll it.
