Misticanza

Ingredients:

1/2 cup chopped pancetta

1 onion

1 stick celery

Olive oil

3 or 4 potatoes

1 lbs. quality Italian sausage, broken up

1 carrot

1 cup peas ( optional)

1 cup or more dry white wine

Chicken broth

Tomato paste, sauce, or puréed tomatoes ( small amount)

Calabrian peppers or red pepper flakes to taste

Salt/ pepper

Directions:

1. Chop finely half onion, celery, garlic. Slice other half of onion

2. In a separate pan, sauté the sausage until browned

3. In a large sauté pan, Sauté pancetta in 2 TBLS of olive oil until browned. Medium heat.

4. sauté the onion and celery over medium heat @ 3 minutes until soft. Add garlic and sauté one more minute. Add red pepper flakes, tomatoes

5. Add white wine to sausage, scrape bottom, and add to the vegetables.

6. Turn down to low. Dice potatoes and add to pan. Sliver carrot with a peeler and add it. Add broth. Simmer slowly about 45 minutes, covered.

7. Add peas last 10 minutes. Season to taste with salt and pepper

Note: good, crusty Italian bread is a must with this to soak up the juices

Note 2: you can substitute or add other vegetables, such as greens, zucchini, green beans. in the above photo, I used green beans.
